cumin, oregano, garlic, salt, and twine
Directions
- Season meat with finely chopped garlic, oregano, cumin, and salt. Let rest 4 to 6 hours.
- Take extended loin and stuff, first placing rice, then peeled potato in thick strips, egg cut in 4, and chorizo on top of everything.
- Roll and tie well pressed with twine. Boil in one liter water until dry (approximately 3 hours).
- Let cool and slice for serving.
- Can sauté with a little achiote if desired.
