Stuffed Loin (Beef or Pork) (Traditional Festive Dish)

Ingredients
1 loin roast
1 potato
2 hard-boiled eggs
1 cup(s) rice with achiote
1/4 chorizo
cumin, oregano, garlic, salt, and twine
Directions
  1. Season meat with finely chopped garlic, oregano, cumin, and salt. Let rest 4 to 6 hours.
  2. Take extended loin and stuff, first placing rice, then peeled potato in thick strips, egg cut in 4, and chorizo on top of everything.
  3. Roll and tie well pressed with twine. Boil in one liter water until dry (approximately 3 hours).
  4. Let cool and slice for serving.
  5. Can sauté with a little achiote if desired.
