2 piece(s) fat chickens, cleaned
4 tbsp oil
1 piece(s) thick stalk of green onion
4 tbsp green onions, chopped
4 clove(s) garlic, crushed
1/2 tsp marjoram, chopped
1/2 tsp oregano, ground
1/2 tsp cilantro, chopped
1/2 tsp bay leaf, chopped
1 piece(s) bitter beer (750 ml)

Directions
  1. Make a brush with the thick scallion, cutting the tip into strips.
  2. Take all the herbs and seasonings and a little beer and mash with hand stone until achieving a paste that is dissolved in the rest of the beer.
  3. Rub the chickens with oil, skewer on a thin straight stick that is placed between two forks, prepare a wood fire below and roast the chickens, turning constantly and bathing with the sauce applied with the onion brush, until golden.
  4. Cut into pieces and serve with papas chorreadas [see p. 387] and white rice.
