8 piece(s) ripe plantains
1 cup(s) rice
1 piece(s) large coconut
pinch cinnamon to taste
Directions
  1. Peel the plantains, split them, remove the seeds from the center and then cut into small pieces.
  2. Separately grate or blend the coconut to obtain a first milk, mix with the rice and cinnamon, and bring to heat.
  3. Add water to the coconut pulp, and squeeze or blend again to obtain the second coconut milk.
  4. To the mixture on the heat add the plantain pieces and the second coconut milk in sufficient quantity for cooking, that is, just barely covering the other ingredients.
  5. Cook everything, stirring continuously, until the plantains fall apart. Then lower the heat and add a bit more coconut milk. Add sugar if you want a sweeter porridge.
  6. Serve hot.
