Directions
- Peel the plantains, split them, remove the seeds from the center and then cut into small pieces.
- Separately grate or blend the coconut to obtain a first milk, mix with the rice and cinnamon, and bring to heat.
- Add water to the coconut pulp, and squeeze or blend again to obtain the second coconut milk.
- To the mixture on the heat add the plantain pieces and the second coconut milk in sufficient quantity for cooking, that is, just barely covering the other ingredients.
- Cook everything, stirring continuously, until the plantains fall apart. Then lower the heat and add a bit more coconut milk. Add sugar if you want a sweeter porridge.
- Serve hot.
