750 gr sugar
pinch cinnamon to taste

Directions
  1. Wash the papayas well, peel them, remove the core and cut into long slices.
  2. Leave the slices to dry in the sun from one day to the next.
  3. The next day, put the dried slices in a pot with water, sugar, cloves and cinnamon to taste, and cook over low heat for 2 hours.
  4. When the papayas are soft and the syrup has reached a honey-like consistency with a champagne color, remove from heat and store in a glass container, or let them dry on a board.
  5. Serve the sweet accompanied with soda crackers.
