2 ripe nísperos (loquats)
½ sugar
½ vanilla
¼ ground cinnamon
Directions
  1. Take the nísperos, peel them, and remove the seeds. Once that task is finished, mash them a bit with a fork.
  2. In a pot, add all the obtained níspero, sugar, and spices. Cook on low heat, stirring for 45 minutes with a wooden spoon until the jam takes on a reddish color, which means it's ready.
  3. Remove and let it cool, then jar it and enjoy it alone, with bread, or crackers.
  4. This jam is made to take advantage of the abundance of nísperos in our countryside from June to September.
