Ingredients
5 coayotes (squash variety)
3 sugar
5 leaves fig
ground cinnamon and cloves
nutmeg
Directions
  1. One hour before, cut the coayotes at both ends and edges to remove the sap, then peel and cut into segments. Pass through boiling water for three minutes to parboil, then put under cold running water and squeeze with your hand.
  2. In a separate pot, put the sugar with the spices and leave until it reaches syrup point. Add the segments and move slowly until they absorb the sugar. Remove from heat. Once cold, roll in sugar and dust with nutmeg to taste.
  3. *This preserve is prepared especially for prayers to Baby Jesus, Baptisms, Novenas and large events, because it yields a lot and is very low cost since coayote is a wild fruit.
