4 plantain peels, chopped
1 roll(s) culantro (recao)
1 sweet pepper
1 sprig(s) celery
leaves culantro coyote (saw-leaf herb)
1 achiote (annatto)
2 oil
1 pepper
Directions
  1. Boil the chopped peels, then discard the water and drain them a little.
  2. Sauté the aromatics and add the peels, over moderate heat, stirring constantly until it boils.
