pinch salt and pepper to taste
Directions
- Season loin with salt, pepper and crushed garlic.
- Place on greased tray and bake in preheated oven at 350° for 1 hour, basting with its own juice occasionally.
- Meanwhile, cook blackberries, water, wine and sugar over low heat, stirring until forming light syrup, to which lemon juice is added.
- Remove loin from oven, cut in slices and arrange again on tray.
- Bathe slices with syrup and return to oven for 10 minutes.
- Serve with white rice.
