Lomo de Cerdo con Moras (Pork Loin with Blackberries)

Ingredients
1250 gr pork loin
4 clove(s) garlic, crushed
250 gr blackberries (or crushed lulo pulp)
1 cup(s) water
1 cup(s) dry red wine
250 gr sugar
1/2 tsp lemon juice
pinch salt and pepper to taste
Directions
  1. Season loin with salt, pepper and crushed garlic.
  2. Place on greased tray and bake in preheated oven at 350° for 1 hour, basting with its own juice occasionally.
  3. Meanwhile, cook blackberries, water, wine and sugar over low heat, stirring until forming light syrup, to which lemon juice is added.
  4. Remove loin from oven, cut in slices and arrange again on tray.
  5. Bathe slices with syrup and return to oven for 10 minutes.
  6. Serve with white rice.
