Fresh milk without boiling
pinch sugar (or panela syrup) to taste
Directions
- Put the milk to curdle in a cured clay pot, covered with a cloth, for 2 or 3 days.
- Stir and add sugar (or syrup).
- Serve cold, or, more commonly, at room temperature.
- The pot is not washed, and a little kumis is left to serve as curdling bacillus in the next preparation.
