Ingredients
1 kg turtle meat, cut in pieces
500 gr yuca (cassava), peeled and cut
500 gr potatoes, peeled and cut
Directions
  1. Guiso: 2 ripe tomatoes, peeled and chopped · 2 onions, chopped · 2 scallion stalks, chopped · 2 garlic cloves, chopped · 4 cilantro leaves, chopped · 2 tablespoons oil · salt, cumin and pepper to taste.
  2. Cook the turtle meat in water that covers it for a minimum of 2 hours, until tender.
  3. Remove, drain and chop finely, reserving the broth.
  4. Mix with the guiso and sauté a little.
  5. Return to the broth where it was cooked, add the yuca and potatoes and cook again over low heat (covering the pot) until everything is soft, about 30 minutes.
  6. The sauce should be thick.
  7. Serve with fariña or farofa.
