Directions
  1. Clean the guatín of viscera, pass through boiling water, peel well removing the hair by hand and then scraping with a knife, cut into pieces and marinate in cow's milk to cover for 2 hours.
  2. Remove, dry and cook, following the same procedure as the guiso.
