Ingredients
1 piece(s) green plantain
1 cup(s) beans soaked overnight
1 piece(s) long scallion
1 piece(s) tomato
2 piece(s) wild cilantro or chillangua
2 tbsp oil or lard
pinch salt to taste
Directions
  1. From the day before, cook the plantain, drain the water and leave in a covered container.
  2. The next day grind it and dissolve in hot water to extract the starch.
  3. Separately, cook the beans with wild cilantro in enough water and add the ground plantain to continue cooking.
  4. Finally add a sauce of onion, tomato and salt, and continue cooking on low heat.
