Directions
- Break the corozos and slice the seeds, and cook in a liter of water until soft (for approximately 1 hour).
- Grind or blend.
- Separately cook 3 panelas in 5 liters of water until dissolved, mix the panela water with the blended corozos and their juice.
- Pass through a strainer and place in a jug with 2 whole panelas to ferment for 3 days (if desired, 1 panela can be added daily) - the right point of fermentation is known when the chicha appears to boil or form bubbles.
