beef offal (liver, heart, kidney, sweetbread and lung)

Directions
- Wash the offal very well and then chop it into small pieces.
- Separately, in a pot, prepare a sauce with onion, tomatoes, garlic, sweet pepper, salt and cumin to taste.
- When the sauce is ready, add the offal and cook over medium heat for 45 minutes or until tender.
- When the preparation has thickened, add the chopped potato and cook for 10 more minutes.
- Serve hot with white rice.
