cup(s) stew prepared with achiote [see p. 319]
pinch salt and pepper to taste
Directions
- Put the meat to sweat with a little water, vinegar, salt and pepper in a covered pot (for approximately 1 hour).
- When tender, remove, cut, and shred.
- Then mix with the annatto guiso and let simmer for 15 minutes on low heat, stirring occasionally.
- Serve with corn bollos or dry white rice.
