Ingredients
1 gr beef rump center (punta de anca)
2 tbsp vinegar
1 cup(s) stew prepared with achiote [see p. 319]
pinch salt and pepper to taste
Directions
  1. Put the meat to sweat with a little water, vinegar, salt and pepper in a covered pot (for approximately 1 hour).
  2. When tender, remove, cut, and shred.
  3. Then mix with the annatto guiso and let simmer for 15 minutes on low heat, stirring occasionally.
  4. Serve with corn bollos or dry white rice.
