kg pork loin
500
gr white onion, finely chopped
4
clove(s) garlic, finely chopped
2
piece(s) bay leaves, ground
1
tbsp thyme
2
piece(s) limes (juice)
2
piece(s) tablespoons of vegetable oil
1
piece(s) bottle (750 ml) of bitter beer
pinch salt and pepper to taste
Directions
- Prepare a brine with a little beer, lemon juice, onion, garlic, bay leaf, thyme, salt and pepper.
- Rub the loin strongly with the brine all over, several times, and leave in a container covered with a damp cloth in the refrigerator until the next day.
- Then bake in preheated oven at 300° for 1 hour and 50 minutes approximately, sprinkling with the rest of the beer while roasting.
- Check for doneness and serve with green beans, small onions and sautéed bell pepper, accompanied by white rice.
