Ingredients
2 kg pork loin
500 gr white onion, finely chopped
4 clove(s) garlic, finely chopped
2 piece(s) bay leaves, ground
1 tbsp thyme
2 piece(s) limes (juice)
2 piece(s) tablespoons of vegetable oil
1 piece(s) bottle (750 ml) of bitter beer
pinch salt and pepper to taste
Directions
  1. Prepare a brine with a little beer, lemon juice, onion, garlic, bay leaf, thyme, salt and pepper.
  2. Rub the loin strongly with the brine all over, several times, and leave in a container covered with a damp cloth in the refrigerator until the next day.
  3. Then bake in preheated oven at 300° for 1 hour and 50 minutes approximately, sprinkling with the rest of the beer while roasting.
  4. Check for doneness and serve with green beans, small onions and sautéed bell pepper, accompanied by white rice.
