Ingredients
2 gr salted catfish
1 cup(s) guiso (Colombian sofrito) [see p. 319]
8 piece(s) eggs, beaten
2 tbsp wheat flour
pinch salt and pepper to taste
Directions
  1. Wash the fish very well, put in boiling water for 3 minutes, remove and drain.
  2. Transfer to a covered pot with a little water to steam it (en viuda) for 15 minutes.
  3. Remove, shred the meat, making sure there are no bones.
  4. Heat the sofrito and add the fish, salt and pepper.
  5. Mix well and add the beaten eggs, stirring until they become like scrambled eggs.
