Directions
- Beat the egg whites to stiff peaks, add the drops of vinegar, cream of tartar and, little by little, the sugar.
- When the whites are firm, add the vanilla (or anise).
- Take out spoonfuls and place on a greased pan, bring to preheated oven at 150°, for 2 hours; turn off the oven and leave until the oven cools completely.
- Meringues, more than cooking, dry in the oven.
- Any sudden temperature change (for example, opening the door too soon) makes them crack.
