Ingredients
1000 gr very meaty pork spine
14 cup(s) water
250 gr cuchuco de trigo (cracked wheat)
4 tbsp wheat flour
250 gr peeled and chopped papas sabaneras
500 gr small papa criolla
250 gr green peas
125 gr whole tender fava beans
3 piece(s) chopped scallion stalks
5 piece(s) chopped cabbage
3 clove(s) crushed garlic cloves
pinch salt and pepper to taste
Directions
  1. Cook the pork spine in 14 cups of water; add cuchuco de trigo, scallion and garlic, leaving everything over high heat for 45 minutes.
  2. Remove the spine from the broth, and to it add papas sabaneras, peas and fava beans. Let cook for another 15 minutes.
  3. Incorporate the papa criolla, cabbage leaves, salt, pepper, wheat flour and the spine chopped in 8 portions.
  4. Cover and let cook over low heat for 20 minutes. Serve hot.
