750 gr yuca (cassava)
500 gr pork meat, chopped
1 piece(s) pearl onion, grated or finely chopped
1/2 cup(s) tomato
3 piece(s) egg whites
oil for frying
pinch cumin, pepper and salt to taste
Directions
  1. Peel the yuca and put to cook in salted water until soft. Drain, grind, mix with salt and knead. To this dough can be added 1 cup of flour and 1 egg for greater elasticity.
  2. Separately cook the pork meat, in little water with salt, until cooked and tender.
  3. In a pot sauté pearl onion and tomato, adding cumin, pepper and salt to taste. Incorporate the pork meat and leave a few minutes over low heat.
  4. Take portions of yuca dough, the size of an egg, and press with the thumb in the center of the dough to open them and fill them with the guiso. Close with the same dough.
  5. Pass the assembled carimañolas through beaten egg whites, to fry them in hot oil until golden.
