Directions
- Chop chulquín and pass through hot water several times to remove bitterness.
- Cook 30 minutes, discard water and grind coarsely.
- Put in a container with pipián, hogao, cheese, eggs, milk, butter, parsley, salt and pepper; mix stirring slowly until everything is incorporated, leave for 40 minutes on medium heat.
- Serve hot.
