Ingredients
750 gr chulquín (tender bamboo shoots)
500 gr pipián (pumpkin seed filling) [see p. 255]
1/2 cup(s) hogao (Colombian tomato-onion sauce) [see p. 253]
125 gr cheese, grated
2 piece(s) hard-boiled eggs, chopped
1 cup(s) milk
2 piece(s) tablespoons of butter
2 tbsp parsley, chopped
salt and pepper
Directions
  1. Chop chulquín and pass through hot water several times to remove bitterness.
  2. Cook 30 minutes, discard water and grind coarsely.
  3. Put in a container with pipián, hogao, cheese, eggs, milk, butter, parsley, salt and pepper; mix stirring slowly until everything is incorporated, leave for 40 minutes on medium heat.
  4. Serve hot.
