1 kg morocho corn
2 water
Directions
  1. Soak corn, wash well, crack and peel.
  2. Put in a clay pot with water to cover, for 15 days, drain and grind very fine, pass through a sieve twice, grinding any residue that remains and straining again with fresh water; let sit to settle.
  3. This sediment or corn starch is put to cook in a bronze (or copper) pan, stirring, until it detaches from the pan.
  4. Remove from heat and keep in a cool place.
  5. This masa is very popular in Nariño and easily obtained in any market.
