- Cook and reduce the sugarcane juice until it forms a syrup.
- Put threshed corn in water to cover for one day, remove, drain and grind.
- Mix the masa and syrup with fresh water and let ferment for 3 days, more or less, to taste. (The degree of fermentation also varies according to the desired level of intoxication).
