gr dried meat, chopped in small pieces

piece(s) round onions, peeled and chopped

piece(s) scallion stalks, chopped

piece(s) large tomato, peeled and chopped

pinch salt and achiote to taste
Directions
- Wash meats very well, soak in cold water for 15 minutes, remove and discard water.
- Then cook in 8 cups water with oil, onions, tomato and achiote for 30 minutes (medium heat).
- Taste for salt, if necessary add a little more.
- Add rice and cumin, stir well and leave about 20 minutes until water evaporates.
- Then add cheese, stir, cover, lower to low heat and leave for 15 more minutes.
- Should be quite moist.
