Ingredients
1 piece(s) smoked rabbit, approximately 4 pounds (2 kg)
1/2 cup(s) guiso (Colombian sofrito) [see p. 319]
1 tbsp mustard
1 tbsp vinegar
2 tbsp sour orange juice
2 tbsp lemon juice
pinch salt, cumin and pepper to taste
Directions
  1. Wash the rabbit very well, rub with lemon juice, cumin and pepper and let rest for 1 hour.
  2. Grill over charcoal on a grate for 1 hour with low heat, turning until golden.
  3. Remove, cut into pieces and shred the meat.
  4. Bathe with the sour orange juice, vinegar and mustard.
  5. Heat the guiso and mix with the meat, let simmer for 10 minutes on low heat.
  6. Serve with cooked plantain (or yuca) and dry white rice.
