  1. Cook the chicken and let it cool. Then fry the potato with the achiote, pepper, and onion.
  2. Cook three hard-boiled eggs, stuff the chicken with the achiote potato and the hard-boiled eggs, when the chicken is stuffed, fry it in a pan with very hot lard and it's ready to serve.
