Ingredients

grated papaya stem

cecina (salted beef), chopped

potatoes, chopped
lard

onion, chopped
4
garlic cloves, chopped

sprig oregano, finely chopped

achiote (annatto)
hot chili pepper to taste
salt to taste
Directions
- Grate the soft part of the papaya stem and boil for 10 minutes.
- Separately, cook the meat and then chop it finely (reserve).
- Cook and chop the potatoes, not too finely. Also reserve.
- Fry the remaining ingredients in lard for 10 minutes.
- Then add the chopped potatoes, meat, and grated papaya stem. Cover and cook on low heat for 25 minutes and it's ready.
- Serve with tortillas.
