Picadillo de Palo de Papaya (Papaya Stem Hash)

Ingredients
1 grated papaya stem
1/2 cecina (salted beef), chopped
1 potatoes, chopped
lard
1 onion, chopped
4 garlic cloves, chopped
1 sprig oregano, finely chopped
1/2 achiote (annatto)
hot chili pepper to taste
salt to taste
Directions
  1. Grate the soft part of the papaya stem and boil for 10 minutes.
  2. Separately, cook the meat and then chop it finely (reserve).
  3. Cook and chop the potatoes, not too finely. Also reserve.
  4. Fry the remaining ingredients in lard for 10 minutes.
  5. Then add the chopped potatoes, meat, and grated papaya stem. Cover and cook on low heat for 25 minutes and it's ready.
  6. Serve with tortillas.
