Ripe Chayote Picadillo with Salchichón (Hash)

Ingredients
1/4 salchichón (dry cured sausage)
2 large ripe chayotes
1 onion
1 sweet pepper
4 garlic
1/2 dried oregano
1 generous salt
1 pinch cumin
Directions
  1. Chop the chayotes into small cubes, grate the salchichón, and chop the aromatics.
  2. Sauté the aromatics and salchichón, add the chayote and continue sautéing for about 30 minutes.
