Pork Loin with Blackberry or Lulo Sauce

Ingredients
1000 gr pork loin
3 clove(s) garlic cloves, crushed
1 cup(s) blackberries or mashed lulo pulp
1 cup(s) water
1 cup(s) dry red wine
1 cup(s) sugar
1 tsp lemon juice
pinch salt and pepper to taste
Directions
  1. Preheat the oven to 350°F and season the loin with salt, pepper, and crushed garlic.
  2. Place on a greased baking sheet and bake for 1 hour, basting it with its own juices occasionally.
  3. Meanwhile, in a small pot over medium heat, cook the fruit, water, wine, and sugar, stirring until forming a light syrup.
  4. Add lemon juice and mix well.
  5. Then remove the loin from the oven, cut into slices and put back in the pan; bathe with syrup and bake for 10 minutes.
  6. Serve with white rice.
