Directions
- After peeling the armadillo, proceed to eviscerate it and wash it very well; then salt it and let it rest for 1 hour so the salt penetrates.
- Without having cut it up, place it whole on a grill and let it roast over coals for 2 hours or until it is well cooked.
- Serve hot.
