Ingredients
10 piece(s) oranges or tangerines, preferably tart
2 cup(s) sugar
4 cup(s) water
4 piece(s) eggs
Directions
  1. Prepare syrup over low heat with water and sugar.
  2. When ready, remove and let rest.
  3. Beat egg whites to stiff peaks, then add yolks one by one without stopping beating.
  4. Pour beaten mixture into syrup, incorporating with folding motions and finally add juice from sides.
  5. Cover pot and cook over low heat, approximately 1 hour, until syrup thickens.
