Ingredients
16 cup(s) water
750 gr porous bone, preferably from hip
500 gr beef cut into pieces
4 piece(s) scallion stalks
1 piece(s) bouquet of thyme, oregano and bay leaf
pinch salt, pepper and cumin to taste
optional: instead of the bones and meat, use chicken pieces
Directions
  1. Put the bones and meat (or ribs) in cold water and bring to fire with whole scallions, herb bouquet, pepper and cumin and let boil for 1 hour on high heat.
  2. At the end add salt.
  3. Should result in a very nutritious broth.
  4. Let cool and degrease if desired.
  5. Remove the scallion and can be refrigerated for several days.
