gr porous bone, preferably from hip

gr beef cut into pieces

piece(s) scallion stalks

piece(s) bouquet of thyme, oregano and bay leaf
pinch salt, pepper and cumin to taste
optional: instead of the bones and meat, use chicken pieces
Directions
- Put the bones and meat (or ribs) in cold water and bring to fire with whole scallions, herb bouquet, pepper and cumin and let boil for 1 hour on high heat.
- At the end add salt.
- Should result in a very nutritious broth.
- Let cool and degrease if desired.
- Remove the scallion and can be refrigerated for several days.
