1 piece(s) green papaya
10 piece(s) higuillos (small figs)
10 piece(s) figs
3 piece(s) panelas, cut
3 water
10 piece(s) almojábanas (cheese rolls)
250 gr white cheese, cut into slices
Directions
  1. Put lemons to bleed in fresh water, inside a copper pan, for 2 days; water is changed occasionally.
  2. Then remove, cut in two, extract pulp, and put to cook in same pan for 30 minutes.
  3. Green papaya is peeled, cut into slices and passed through boiling water to remove the latex, and then cut into thin slices.
  4. Figs are passed through boiling water, and cut in cross at thick part, without separating.
  5. Prepare in copper pan a syrup with water and panela.
  6. Add all fruits and let soak for 20 minutes, stirring with wooden spoon.
  7. To the almojábanas make a hole in the middle, and fill with pieces of cheese.
  8. Put almojábanas on top of syrup for 5 minutes (so cheese melts or serve cheese separately).
