Ingredients
10 cup(s) water
1 kg beef cecina (sun-dried salted beef)
4 piece(s) green hartón plantains (cooking plantains), peeled and hand-torn
500 gr yuca (cassava), peeled and finely chopped
500 gr ahuyama (squash), peeled
3 piece(s) scallion stalks, chopped
4 piece(s) wild cilantro leaves
2 clove(s) garlic, chopped
salt, pepper and cumin
Directions
  1. Soak the meat in salted water for two hours, remove and wash under running water.
  2. Cook for 1 hour, and when tender remove and cut into 2 cm cubes, return to the broth, add the plantains, and cook for 15 minutes; then add the yuca and chopped ahuyama with the garlic and scallion.
  3. Lower to low heat, cover and let simmer for 25 minutes.
  4. Add the seasonings and wild cilantro 10 minutes before removing from heat, after checking the salt level.
