Directions
- Cook the chicken with the onion and seasonings for 45 minutes, until it starts to soften.
- Add the plantains and boil another 20 minutes.
- Then add the squash and yuca, cook for 15 minutes, add the cilantro, lower to a gentle heat, covered, and keep for 10 minutes.
- Serve with ají and dry white rice.
