2 kg iguana meat, with bones
same ingredients as the guiso
Directions
  1. Cut the iguana into pieces, rub with lime, salt and pepper and let rest for 15 minutes.
  2. Then cook in water to cover for 60 minutes, until tender.
  3. Remove the skin and cook with the bones or remove the meat and shred.
  4. Follow the same procedure as the guiso.
