same ingredients as the guiso
Directions
- Cut the iguana into pieces, rub with lime, salt and pepper and let rest for 15 minutes.
- Then cook in water to cover for 60 minutes, until tender.
- Remove the skin and cook with the bones or remove the meat and shred.
- Follow the same procedure as the guiso.
