kg beef, well ground

gr bacon, finely chopped

gr sweet peppers, ground

clove(s) garlic, ground

tbsp hot pepper

tbsp oregano and cilantro, chopped
pinch salt and pepper to taste
pork casings, well washed and soaked
Directions
- Mix everything and leave in a clay pot until the next day, refrigerated (or in a cool place), stirring from time to time.
- Fill the casings, tie and knot every 10 cm.
- Prick with a pin to remove air.
- Put to dry in smoke, or hang in a cool, ventilated place away from flies.
- Eat cooked, grilled or fried, accompanied by arepas or patacones.
