Ingredients
1 kg pork, well ground
1 kg beef, well ground
250 gr bacon, finely chopped
250 gr sweet peppers, ground
3 clove(s) garlic, ground
1/2 tbsp hot pepper
1 tbsp oregano and cilantro, chopped
pinch salt and pepper to taste
pork casings, well washed and soaked
Directions
  1. Mix everything and leave in a clay pot until the next day, refrigerated (or in a cool place), stirring from time to time.
  2. Fill the casings, tie and knot every 10 cm.
  3. Prick with a pin to remove air.
  4. Put to dry in smoke, or hang in a cool, ventilated place away from flies.
  5. Eat cooked, grilled or fried, accompanied by arepas or patacones.
