pinch cumin, pepper, achiote and salt to taste
Directions
- Wash the mondongo very well, rub with lemon and put to cook in water that covers it and a little baking soda.
- Let cook for 45 minutes in pressure cooker (or 3 hours in regular pot).
- Remove and discard the water.
- Remove and chop into small pieces.
- Put together the mondongo, chorizo, meat, pork foot, onions, tomatoes and remaining seasonings to cook in the water for 30 minutes.
- Add the potatoes and yuca and let boil until everything is tender (about 30 minutes).
- Serve with cilantro sprinkled on top and accompany with ají pique.
