Ingredients
1 pig's head descaled
pork offal: tongue, kidneys, liver, spleen and heart
2 tbsp tablespoons of salt
4 ounces of oregano
2 heads of garlic
1 liter of water
1 tbsp tablespoon of achiote
2 chicken consommé
Directions
  1. All the ingredients are chopped, they are placed over low heat together with the water, oregano, achiote, consomé, garlic, in a wood-fired stove, in an iron pot for three hours with a wooden ladle.
