Pan Batido de Chayote Tierno y Zanahoria (Traditional Costa Rican)

Ingredients
2 young and fresh chayotes
7 cloves
1 slice(s) slice nutmeg
7 small balls jamaica flowers (hibiscus)
3 water
1 juice of criollo or mesino lime
½ cup(s) sugar
½ cup(s) flour
½ baking powder (royal)
½ ground cinnamon
½ ground nutmeg
½ ground cloves
½ vanilla
1 butter
4 eggs
1 can(s) sweetened condensed milk
½ cup(s) coarsely grated carrot
Directions
  1. Peel the chayotes, slice them, and remove the heart. Put them in a pot with the 3 cups of water and the other ingredients except the lime. Cook until they soften.
  2. Drain them, let them cool, and place them in a bowl with the lime juice for 20 minutes. Drain after this time and process them.
  3. Beat the butter until creamy, then add the sugar, eggs, flour sifted with the spices, carrot, vanilla, condensed milk, and chayote.
  4. Grease a pan and pour in the mixture.
  5. Preheat the oven.
  6. Bake for 20 to 30 minutes.
