bouillon cubes
salt to taste
Directions
- Boil the root with the potatoes and 6 tablespoons of salt.
- When the potatoes are soft, remove everything from heat, take out the potatoes, peel them, and dice them into small cubes.
- Wash the root well and drain it very thoroughly.
- Chop the aromatic vegetables, fry them in lard, along with the chorizo and achiote, then add this to the root in a large pot, mix well.
- Add the bouillon cubes and salt to taste.
- Cook well while stirring constantly.
