Ingredients
white corn
pork meat (ribs and trotters)
chile
cilantro
black pepper
salt
lime (calcium hydroxide)
Directions
  1. Three days before preparation, cook the corn in water with a little bit of lime, to peel it.
  2. Once it is cooked, wash it at least four or five times to remove the lime.
  3. Once ready, cook it again but with the meat, so it bursts open.
  4. Add seasonings which are: black pepper to taste, chile, cilantro and salt.
  5. Add a little bit of masa to thicken it slightly.
