Arracache (Traditional Festive Dish)

Ingredients
2 arracache
1/2 breast roast
garlic, oregano, salt, and Tabasco sauce
Directions
  1. Cook breast roast with garlic, oregano, cumin, and salt until very tender. Slice as thin as possible.
  2. Peel arracache, cut in pieces, and grind. Boil water and add ground arracache for few minutes. Remove and dry.
  3. Sauté half head of sliced garlic. Add finely chopped meat, salt, hot sauce to taste, and two cups meat broth. Mix well.
  4. Add ground arracache and cook over low heat for 30 minutes, stirring occasionally.
