Directions
- Cook breast roast with garlic, oregano, cumin, and salt until very tender. Slice as thin as possible.
- Peel arracache, cut in pieces, and grind. Boil water and add ground arracache for few minutes. Remove and dry.
- Sauté half head of sliced garlic. Add finely chopped meat, salt, hot sauce to taste, and two cups meat broth. Mix well.
- Add ground arracache and cook over low heat for 30 minutes, stirring occasionally.
