Ingredients
4 cup(s) all-purpose flour
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/4 tsp salt
1/4 tsp nutmeg
1/4 tsp ground cloves
1 piece(s) stick of butter
1/2 cup(s) sugar
1 cup(s) tapa de dulce (unrefined cane sugar)
1/2 cup(s) oil
3 piece(s) whole eggs
3 cup(s) ripe squash puree
2/3 cup(s) strong brewed coffee
1 cup(s) pickled apple
1 cup(s) raisins or mixed seeds
Directions
  1. Sift all dry ingredients, beat the butter, sugar, tapa de dulce, oil, and eggs for 5 minutes, all together.
  2. Add the squash puree and the apple (optional).
  3. Add the dry ingredients alternating with the coffee.
  4. Add the raisins or mixed seeds and bake in the oven at 350°F for one hour.
