Directions
- Cook the soft yellow corn in water with wood ash until the husk begins to come off. Then wash it in a basket or sieve and let it rest in cold water overnight.
- The next day, grind the corn together with the pork rinds, after adding salt and butter. Knead everything until you get a smooth consistency to form the arepas, which should be 0.5 cm thick. If necessary, add warm water to moisten and give elasticity to the dough.
- Place the arepas on a griddle and brown them on both sides until they are nicely toasted.
