Directions
- Wash the kid goat leg well to prevent it from having any strong odor.
- Then marinate it with the rest of the ingredients and keep it this way for 2 days.
- After this time, remove it from the marinade, wrap it in aluminum foil, and place it in the oven, preheated to 300°F, for 2 hours.
- Once removed from the oven, let the kid goat leg rest before cutting it into slices, which are eaten accompanied by yellow arepas, cooked yuca, and hot sauce.
- If you want to prepare roasted older goat in the oven, keep in mind that the meat is a bit tougher and the pieces should be pre-cooked for 3½ hours with salt, garlic, onion, and cilantro.
- Once cooked, let them cool and marinate with salt, cumin, pepper, crushed garlic, food coloring, and ½ cup of pork lard.
- Once seasoned, place the pieces in the oven at a temperature of 350°F until they brown.
- The meat should not lose its moisture, so you can use a mixture of beer and marinade to keep it moist.
