1 piece(s) white onion, finely chopped
1 clove(s) garlic, chopped
1/4 cup(s) pork lard or cooking oil
1/4 cup(s) vinegar
cilantro
pinch food coloring to taste
pinch salt, cumin, and pepper to taste
Directions
  1. Wash the kid goat leg well to prevent it from having any strong odor.
  2. Then marinate it with the rest of the ingredients and keep it this way for 2 days.
  3. After this time, remove it from the marinade, wrap it in aluminum foil, and place it in the oven, preheated to 300°F, for 2 hours.
  4. Once removed from the oven, let the kid goat leg rest before cutting it into slices, which are eaten accompanied by yellow arepas, cooked yuca, and hot sauce.
  5. If you want to prepare roasted older goat in the oven, keep in mind that the meat is a bit tougher and the pieces should be pre-cooked for 3½ hours with salt, garlic, onion, and cilantro.
  6. Once cooked, let them cool and marinate with salt, cumin, pepper, crushed garlic, food coloring, and ½ cup of pork lard.
  7. Once seasoned, place the pieces in the oven at a temperature of 350°F until they brown.
