500 gr rice

Directions
  1. Soak the rice for 2 hours in enough water to cover it.
  2. After this time, in a clay pot, put the cereal to cook in 3 liters of water. Add panela in pieces, sour orange leaves, cinnamon, cloves, and nutmeg to taste. Stir constantly with a wooden spoon until the mixture thickens and reaches the consistency of a porridge.
  3. Remove from heat and let it rest in a cool place in the shade to ferment for 2-3 days. Guarruz is kept in the refrigerator and dissolved in fresh water to make a masato-type drink, which can be sprinkled with cinnamon when serving.
