Ingredients
1 piece(s) large chicken
2 piece(s) scallion stalks, finely chopped
2 clove(s) garlic, crushed or finely chopped
3 piece(s) ripe tomatoes, peeled, seeded, and chopped
2 tbsp vinegar
6 tbsp oil
1 piece(s) shot of aguardiente
pinch cumin to taste
pinch salt and pepper to taste
500 gr cooked rice
250 gr sweet potatoes, cooked and cut in large pieces
4 piece(s) arepas oreja’e perro
Directions
  1. Prepare a hogao with half the oil, onion, garlic, tomato, vinegar, cumin, salt, and pepper to taste. Sauté for 5 minutes and let cool.
  2. Cut the chicken in 8 pieces and marinate with the cold hogao for 2 hours. Then remove the chicken from the hogao and reserve it.
  3. Heat a pan with the rest of the oil and brown the chicken. Add the cold hogao and let cook over low heat for 45 minutes.
  4. Add the shot of aguardiente and cook for 5 more minutes. Serve with white rice, sweet potatoes, and arepas oreja'e perro.
